Beef
This native Scottish breed has changed little over the centuries, is naturally reared to produce meat that is both lean and tender, full of flavour and unsurpassed in quality. Slower maturing than most breeds, the Highland carcass has a distinct flavoured meat that is well marbled producing premium quality meat that is second to none.
Quality Beef - The Healthy Option
Highland Beef is also one of the healthiest meats you can buy. Independent tests in both the UK and US have consistently shown Highland Beef to carry less than one third of the fat of "normal supermarket beef" and around only 60% of the choleserol levels, whilst at the same time being higher in protein.
The Highlander is immune to many diseases and pests and, without the need for modern farming practices, the end product is guaranteed to be free of many of the chemicals and growth promoters that concern today's consumers.
Carcasses are hung for approximately three to four weeks in the traditional way to maximise the flavour before being butchered to our specific instructions. The majority of the carcass makes prime cuts, with less waste than more modern breeds.
Once tasted, most accept that Highland Beef "tastes like beef used to taste... and should taste". Whether it is best fillet steak. or even mince, Highland Beef leaves you with an eating experience you will not forget.
